We are a gluten free, dairy free, peanut free household. For those who are looking for free from baking recipes, I could not recommend Katarina Cermelj's 'The Elements of Baking' more. We've made around ten things from this book and every one turns out perfectly with not too much faff.

Kitchen-foraged an old favourite for last night's meal. Ching-he Huang's Five spice seitan, sweetheart cabbage, sweetcorn & chilli, tweaked as per: soy marinated tempeh subbed for seitan & noodles added.
Made with half a cabbage that'd been languishing in the fridge since before Christmas - and was absolutely fine.
Went down nicely, alongside apple-citrus Sixteen Ridges Vineyard fizz, made with Ledbury-grown Pinot Noir & Seyval Blanc.

Made tonight: vegan scalloped potatoes.
Used this recipe several times over lockdown, especially for holidays. Took my notes from those experiences and sliced the potatoes much thinner than previous. Turned out great. Kid not a fan.
Served tonight with fake tofurky brand ham roast, which I picked up over the holidays. Kid thought that was fine.

The potato will still be edible, and the inside will actually be really delicious! But the name jacket potato takes on a whole new life, because the skin of the potato becomes thick and hard like leather. It鈥檚 almost like a potato jerky.
If you have a dog, this might be your dog鈥檚 favourite day because it turns out that my dog LOVED her potato jerky while I loved my baked potato.
