@quadrivial I hope there's something I can find that's closer to me.... like maybe Springfield or Kansas City MO, if not I'll just test different recipes repeatedly on my spouse until something works well...

Nori Rotterdam, I had a vegan hot chocolate with vegan cream and a fried vegan shrimp sushi roll. The hot chocolate was standard, the whipped cream was very tasty with no aftertaste. The sushi roll luckily didn't taste too much like shrimp (I was a bit worried because I can't eat Penny own vegan brand "Food for Future" prawns), all those fried ones taste pretty similar to me. The vegan shrimp on its own did have a mild sea taste (I just can't chew an entire piece at once, gotta eat each one in at least 3 bites). The roll is creamy because of avocado. Wish I had more time to try other dishes.
Backstage vegan kitchen Rotterdam, a part of a club, so lighting is not the best for food. Had a vegan Korean chicken sandwich which had grilled vegan chicken, vegan bacon, kimchi, and some crisps and salad Olivier (peas, carrots, potatoes, dill) on the side. The sandwich was huge and I had to deconstruct it and eat it with a knife and a fork like every burger ever. The sandwich was very good, but the salad was the best ever. I often make that salad, but it has never turned out this tasty.
And on the train I had an Albert Heijn vegan egg and bacon wrap. Very tasty, reminds me of vegan egg salad from German supermarkets. Most importantly it doesn't taste like turmeric!
@domo Leaving it now. It was a rush to catch the train, and the pavements are icy and slippery. -1°C in Rotterdam feels much colder than -7°C in Oslo. Went on a harbour cruise, it was nice, but gloomy weather.
Will comment the food once I am safe in the DB train.

Kitchen-foraged an old favourite for last night's meal. Ching-he Huang's Five spice seitan, sweetheart cabbage, sweetcorn & chilli, tweaked as per: soy marinated tempeh subbed for seitan & noodles added.
Made with half a cabbage that'd been languishing in the fridge since before Christmas - and was absolutely fine.
Went down nicely, alongside apple-citrus Sixteen Ridges Vineyard fizz, made with Ledbury-grown Pinot Noir & Seyval Blanc.
So, ca. 37 Trilliarden Kilo Gemüse wurde geschnitten, der Reiskocher kocht Reis, dann ma' los! 👩🍳

Last December, we were encouraged when the Dietary Guidelines Advisory Committee—the experts that inform federal nutrition policy—released its recommendations for the 2025–2030 U.S. Dietary Guidelines.
The science-backed report called for choosing plant over animal proteins, limiting saturated fat, and eating a more whole-food, plant-forward diet overall. The official guidelines, released this week, diverge from that advice.

I generally know if an Indian restaurant abroad has flavors I like if they have lime soda (sweet or salty). Salty soda is amazing and I always order it. I wish we had salty sodas elsewhere.
The logic being, if they only offer sweet soda then they are catering only to people who like sweet sodas, which isn’t going to be the right flavor profile for me. Also having both is expected at most places
Even better if they also do homemade lassi (sweet or salty). The commercially made lassi here is rather revolting
