Unripened, Granny Smith apples. They go from reddish to that typical bright green color when they’re ripe.

Winter tomatoes? I’ve got a whole bunch of them that are just starting to ripen. There are three plants that are giving fruit. One is a volunteer, one is when I bought and then the other one is a leftover from the summer.
