I know, I know, but I started the dough yesterday. This is a hybrid matnakash and a hybrid fougasse.
Both breads on the cutting board, looking handsome.
A big ol’ puffy fougasse. It’s roughly round in shape, with five slits evenly arrayed around the center. It’s topped with rosemary and flaky salt.
A matnakash on a cutting board. This is an oval flatbread with deep furrows, meant to look like a plowed field. It’s golden brown with a lighter center, where it’s been brushed with yogurt. It’s topped with nigella and sesame seeds.
