Not sure if people think that for "age verification they will *send* the data to the other party".
Highly unlikely.
The "other party" will get access to all the data via some API and is going to "use what they need" to complete their process. (and/or share it further)

Outside of theory and paperwork there is absolutely no way to tell what, how much the "other party" gathers and does....what....?
