Servershop24 replied. They thanked me for the "informative quote" of EIA-310 and apologised for the "confusion".
Further more they now provided the reason of "we don't list the lengths as the rails from specific vendors are designed for the racks from the very same vendor.
Did not know that everyone that is buying HPE or Fujitsu rails from a 3rd party separately also has server racks from that very same vendor...

EIA didn't specify depths at all. I don't think there exists a standard for that, but if there is, it would probably be in one of the many subparts of the IEC 60297 standard. There are a dozen or more subparts, and like most ISO standards, they're each ridiculously expensive.
So I thought too. But I asked http://servershop24.de/ about the lengths of their server rails and their reply was "we don't list them because they comply to the minimum and maximum lengths according to EIA-310.
And you were right that there are measurements in IEC 60297.
In Table 4 of IEC 60297-3-100 (aka. DIN EN 60297-3-100) to be precise.
But it also doesn't state any limits. Just a few "common" values wich range from 300mm to 1200mm.

As I read this standard any depth that is divisible by 25mm should be compliant, right?
